Trying to eat low carb? This stuffed BLT chicken sandwich is a yummy alternative to the classic!

Eating low carb doesn’t mean you have to miss out on the good stuff! I made one easy swap to the classic BLT sandwich, and I don’t think I’ll ever go back! Better yet, you get more protein without sacrificing flavor, and it’s a great way to jazz up a boring chicken breast.

This is such a unique chicken breast hack!

Extra tips for how to make this Chicken BLT:

  • For the best ‘buns’, try to use nice, thick chicken breasts – not thinly sliced or strips. This will make it easiest to cut into the buns.
  • Let the chicken cool before cutting into buns.
  • If meal prepping or making ahead for lunches, don’t add mayo until ready to serve. Wondering about my cute platypus knife?  Shop this one and even more fun kitchen gadgets HERE!

I can’t reonlinemend this Stuffed Chicken BLT Sandwich enough!

I was a little skeptical at first, but I can’t believe how tasty and fresh this BLT chicken turned out! I must have made it look so appetizing that even my 5yo wanted to taste it – and then he couldn’t stop taking bites! 😂

Plus, I think this recipe could be so great for picnics and is perfect for busy weeknights. You could even make a few chicken breast ‘buns’ and stash them in the fridge to add different sandwich toppings for every meal of the week!
