Gluten Free Chicken Pot Pie

Ingredients

  • 1 can of your favorite soup
  • 1 bag of mixed frozen veggies
  • Garlic Powder
  • Thyme
  • A few cups of cooked cubed chicken
  • Pillsbury Gluten-Free Pie & Pastry Dough
  • 1/4 cup of Sour Cream

Directions

Preheat the oven to 425 degrees.

Mix the can of your favorite soup, bag of frozen veggies, seasonings, a few cups of cooked cubed chicken in a pot. Heat on stove top on medium, stir occasionally.

Add 1/4 cup of sour cream once it's heated and continue to stir.

Roll out the Pillsbury Gluten-Free Pie & Pastry Dough (or another pastry dough of your choice) on parchment paper.

Place your chicken and veggie mixture into a baking dish.

Add the rolled dough layer on top of your chicken and veggie dish.

Bake at 425 degrees for 20-25 minutes.

    Is the sour cream just for taste or is it used for the insides to “hold up?” (Does that make any type of sense?) I love this easy recipe but need dairy free. Any suggestions?

      I am on a pcos low-amylose diet which calls for low to dairy free options. So for dishes such as this, I make dairy-free sour cream. I use 1 Tablespoon cornstarch, ½ cup soy milk powder, 1 cup unsweetened almond milk, 1 cup plain unsweetened soy yogurt, 1 tablespoon salt, and 1 tablespoon lemon juice. Mix everything together, cook on low for 10 minutes, cool for 20, and store; this lasts two weeks. 🙂

    I never put sour cream in my pot pie, you don’t need it with the soup at all…I usually use a gluten free cream of chicken soup…also I put potatoes in mine so it’s a bit heartier, I do this with roast beef, chicken and turkey. amazing

    Thanks for the idea! I’m always looking to add some easy dinner ideas to the repertoire. I’m not a huge fan of pot pies traditionally because I don’t like peas/carrots etc but I’m thinking of doing like a potato, mushrooms onlinebo! I might try it with left over shredded rotisserie chicken instead of cubed cooked chicken to make it even easier ??

    I make pot pies often. Just use some canned mixed veggies, cream of chicken, canned chicken or leftover bjs rotisserie chicken, and salt and pepper. And for the crust use the ready made pie crusts or the kind you just unroll. It’s always good in a pinch.

    This truly is delicious and so simple to prepare. I served over rice as suggested. The chicken was tender and quite flavorful. No changes required. However, I did not have any apple juice in the house and substituted chicken broth in its place and the recipe still turned out great! When making this again, I will make sure I use the apple juice 😉 Thanks for a great new chicken dish that is sure to please everyone!

    Collin, this is my go-to recipe for chicken pot pie. My family loves it. I always onlinee to this link and rewatch the video every time when I make it, because there’s no recipes listed. Is there a way y’all could list the recipe on the post. And by the way, I am so grateful for the recipe and don’t mind watching you cook in the video!
