1 cup (8 ounces) sparkling apple cider (light grape juice or lemon lime soda will also work)
2 packets unflavored gelatin (such as Knox brand)
Pop Rocks candy or colored sugar to sprinkle on top

In a small saucepan, pour champagne and 2 ounces of the apple cider. Sprinkle gelatin packets on top and let sit for about two minutes. Turn stove to medium heat and without boiling, dissolve gelatin.

Take off of heat and mix in remaining apple cider. Pour in 2-ounce cups or an 8x8 baking pan. Refrigerate for 2-4 hours until set.

Cut in squares if you are using a baking pan and top with Pop rocks candy or dusting sugar right before serving. (Makes about 16 shots).

Could I heat all the cider with 2 oz champagne, to melt the gelatin, and then add the rest of the champagne? Seema like a waste of good champagne to heat all of it?? Thanks for the help.
I make Jell-O shots all the time. Just heat the cider. Let it cool slightly and then add the champagne. This way the champagne keeps all the alcohol content.
Yes, because we NEED the alcohol. I think this is a neat idea we might try it. But I have never understood why people drink. it tasts nasty and is a bad habit. I guess I’m one in a million. Have a happy new year! drive safely everyone!
You sound like fun Sue 🙄 … the point is that it wastes the expensive part of the recipe, for that you can substitute something else. Yes people like to drink hut just because someone drinks doesn’t make them an alcoholic.
Agreed. People get extremely defensive when you say that, though…maybe b/c some ppl rely on alcohol to be able to enjoy social occasions. I make this without the alcohol in it and everyone loves it- especially all of the kids and anyone that’s pregnant or just doesn’t drink.

Thanks for the tips on the order to add the ingredients. There’s not much point in spending the money on alcohol if you’re just going to heat it out. As if one is going to get into a drunken stupor from a 2oz Jell-O shot…

Great idea Laurie!! I’ve only made Jell-O shots one other time, and they didn’t turn out so well. I was gonna give them another go this New Years. I will try your suggestion!!
