Bacon and Cheddar Egg Boats in Bread

Preheat the oven to 350 degrees.

Cut a long loaf of bread in half. Then cut the middle portion of the top in a v shape. Be careful not to cut the sides or bottom. Remove most of the bread in the center.

Add half of the shredded cheese to the bottom of the bread, and set aside.

In a mixing bowl, whisk together the eggs, cream, salt, and pepper. Pour the egg mixture into the bread evenly. Sprinkle with everything bagel seasoning.

Spread the pieces of bacon, and the remaining shredded cheese over the top. Bake in the oven for 23-25 minutes until the bread is toasted and the eggs are cooked/firm.

Garnish with green onion, and slice to serve.

Extra tips for making this baked eggs in bread idea:

  • I used a loaf of ciabatta bread from the grocery store, however, you can grab French bread or maybe try individual rolls.
  • If you don’t have sharp cheddar cheese on hand, try another onlinebination that you’d enjoy. I think Gouda sounds fabulous or parmesan cheese. Some Boursin cheese would be fantastic.
  • If you happen to have leftovers they reheat well in the microwave or air fryer.
  • You can prep ahead the bacon or other meat like sausage ahead of time to make this process even faster.
