Turn a Plain Chicken Breast Into a Stuffed BLT Sandwich – No Bread Needed! (Low Carb & Kid-Approved)

Eating low carb doesn’t mean you have to miss out on the good stuff! I made one easy swap to the classic BLT sandwich, and I don’t think I’ll ever go back! Better yet, you get more protein without sacrificing flavor, and it’s a great way to jazz up a boring chicken breast.
This is such a unique chicken breast hack!

Low carb BLT without the bread
Ingredients
- chicken breast
- bacon
- lettuce
- tomato
- mayo
Directions

Cook chicken breast 15-20 minutes or until cooked through. Cook bacon to desired crispiness.

Let cool slightly. Cut the chicken in half lengthwise, but not all the way through. Leave the chicken slightly connected like the two sides of a hot dog bun.

Spread mayo over chicken breast.

Slice the tomato, then cut the slices in half. Layer over chicken breast.

Top with bacon, and finally, lettuce. Close the 'bun' and enjoy!
Extra tips for how to make this Chicken BLT:
- For the best ‘buns’, try to use nice, thick chicken breasts – not thinly sliced or strips. This will make it easiest to cut into the buns.
- Let the chicken cool before cutting into buns.
