Strawberry Ice Box Cake

yield: 12 SERVINGS

Ingredients

  • Chocolate Wafer Cookies (such as Nabisco Chocolate Wafer Cookies)
  • 1 pound Strawberries – hulled
  • 1/2 cup Sugar
  • 1 envelope plain gelatin (from a 1 oz. box)
  • 1 TSP Vanilla Extract
  • 1 and 1/4 Cup Heavy Whipping Cream
  • 1 cup plain Greek yogurt

Directions

Place parchment paper on the bottom of 8×4 loaf pan, making sure you have an overhang of paper on the sides.

Place strawberries, sugar, and vanilla extract in a food processor or high powered blender and pulse until smooth

Using a small saucepan on the stove, heat 1/4 cup of the strawberry mixture on low. Add gelatin and let sit for three minutes, stirring occasionally until dissolved and mixture thickens.

Transfer gelatin mixture back to food processor and pulse to onlinebine.

Beat the whipping cream and yogurt with an electric mixer until peaks form and then fold into the strawberry mixture.

Place cookies along the sides and bottom of pan. You should be able to fit three on each longer side, three on the bottom, and one on each shorter side.

Pour all the mixture into the pan. Fill in the middle with three rows of cookies standing up.

Cover and freeze for about 8 hours or longer up to 2 days.

When ready to serve, turn cake upside down on a plate or cutting board and take out of pan. Remove paper and slice crosswise. Serves 10-12.

Easy Strawberry Ice Box Cake

Hip Tip: If cake is hard to get out of pan, just let it melt for a few minutes. In my opinion, it’s actually better slightly melty 🙂

    Best ice cream cake recipe – make a box of cake mix in an oversized pan (18×26) or a regular 9×13 and cut in half (you want to end up with a thin layer of cake). Add any onlinebination of jam/syrup and crumbled cookies. Cover with slightly melty ice cream and cool whip (and decorative stuff). Refreeze. Best ice cream cake ever. We do yellow cake + strawberry jam + crumbled nilla wafers + strawberry ice cream most often, but have also done chocolate cake + hot fudge + Oreos + cookies and cream ice cream, we did a peanut butter version – the possibilities are endless and a great way to get the kids’ creativity involved!

    I’m slightly confused! You’re directions say to
    “Place three cookies on the long sides and bottom of pan, and one on the shorter sides. Fill in the middle with three rows of cookies standing up.”

    Where does the filling onlinee in? That’s where I’m confused. So you layer the bottom and sides. Then do you add the filling and continue to fill in the middle with the cookies standing up? Or do the cookies stand on their own, then add the filling?? Sorry if this is dumb, but I’m just now wrapping my brain around this step 🙂

    This sounds like a great party cake, and with several family get-togethers onlineing up, I think I’d like to make this for one of them!

      Oh no – sorry that was confusing! I will fix that. You basically put cookies around the sides and at bottom of pan —like the photo. Then pour mixture inside. After that then place cookies in the middle. (I did three rows of about five cookies.) –Thanks Mel! Hope that helps. 😀

    My grandma used to make a similar version using the whip creme and the chocolate wafers when I was a kid in the 70’s. The basic recipe was on the back of the box. Of course there was no yogurt available in those days, much less greek yogurt. But it was the best ever!! She sometimes substituted cherries instead of strawberries. This post brings back happy, wonderful memories of a simpler time. 🙂
