Create this fun cupcake recipe for April Fool's Day!
Ingredients
- 9 oz. white cake mix box
- 16 oz. tub cream cheese or vanilla frosting
- 3 drops of yellow food coloring
- 3/4 cup low-sugar strawberry preserves (low-sugar has the best color)
- 24 hazelnut chocolates, unwrapped (I used Ferrero Rocher, but you could use anything that resembles a meatball)
- 2 tablespoons grated white chocolate
Directions
1
Prepare your cupcakes according to package instructions. Let them cool.
2
Tint the frosting with the yellow food coloring. Spread a thin layer of tinted frosting on top of the cupcakes. Arrange the cupcakes on a serving platter close together.
3
Spoon the remaining tinted frosting into a piping bag with a Number 2 Wilton tip. Alternatively, you could use a Ziploc bag and snip a small corner from the bag (1/8 inch). Either piping method is fine!
4
Now, have fun piping the frosting all over the cupcakes to make the noodles (this was my favorite part!). Make sure to pile the βnoodlesβ high and have some of the βnoodlesβ hang over the edges of the cupcakes.
5
Mix the "meatball" chocolates with the strawberry preserves in a bowl to coat. Spoon some of the preserves on top of each cupcake. Place preserves-coated chocolate on top of each cupcake. With a spoon, drizzle cupcakes with the remaining strawberry preserves.
6
Sprinkle the grated white chocolate over the cupcakes to look like Parmesan cheese.
7
Enjoy, and Happy April Fool's Day!
Hip Tips for these Spaghetti & Meatball April Fools’ Cupcakes:
- The “meatballs” in these cupcakes are Fererro Rocher brand chocolates, and look so realistic! They do have hazelnuts, so if you need a nut-free option maybe consider rolling rice crispy treats into balls, or perhaps use chocolate donut holes.
- You’ll need a “sauce” for the meatballs, and strawberry jam looks super realistic for it. Really any type of strawberry topping would work.
- For the frosting, I first dyed white store-bought frosting using yellow dye and then piped it all over the cupcake with a pastry bag and a very thin frosting tip. In a pinch, I’m sure you could put the frosting into a freezer bag and cut one of the corners to make a very small tip.
- Instead of the grated white chocolate as parmesan, coconut shavings would be yummy, too!
These spaghetti and meatball cupcakes are always such a hit!
These April Fools’ cupcakes really made my kids laugh. I loved watching their faces as they tried to figure out what they were actually eating. It’s a harmless, fun way to add a little fun to normal cupcakes.
These would be terrific for a birthday celebration, too, or for any time you need a cool, inventive dessert to bring. Enjoy! 🙂
