Oatmeal Cookie Dough Energy Bites

Ingredients

  • 1 cup rolled oats
  • 1/2 cup unsweetened coconut
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 cup ground flax seed
  • 1/2 cup mini chocolate chips

Directions

Place oats and coconut in a food processor and pulse until mixture is coarsely ground.

Add peanut butter, honey, ground flax-seed, mini chocolate chips, and vanilla extract. Pulse again a few times until ingredients are mixed and forms a dough.

Roll into tablespoon-sized balls onto a baking sheet that's been covered in parchment paper. Mixture made about 21 energy bites for me. Freeze until set, for about an hour.  Enjoy and keep leftovers in a Ziploc bag in fridge or freezer.

My family is crazy for this popular no-bake oatmeal and peanut butter cookie – and I don’t think we’re alone, as this Chocolate Chip Oatmeal Energy Bites post is one of our most visited recipes in Hip2Save history.

Try making energy bites using the food processor!

Today I’m sharing a similar version, but this time using a food processor to chop the oatmeal into a finer texture that gives these bites the taste and texture of cookie dough, which I prefer! Plus this version has unsweetened coconut and vanilla extract for even more delicious flavor and texture.

It takes just a few minutes to mix this together and make the dough balls! These go in the freezer for about an hour to set, and then you can enjoy this perfect two-bite snack! I keep a covered container in the fridge with my energy bites.

Easy pantry ingredients!

You may already have everything on hand for this easy snack idea. I’m simply using old-fashioned rolled oats, peanut butter, honey, and ground flaxseed for a little extra nutrition. If any of these ingredients don’t sound delicious, it’s easy to customize this idea to taste. And of course, if there’s a peanut allergy, consider a nut alternative like SunButter.

    Sounds good. Might I suggest a small tweak. Rolled oats are finer and would work better from a texture standpoint. If you own a vitamix or a good blender (Perhaps even a magic bullet), I would chop the oats in there first to create a flour. I think that might make a yummy dough!!

    Don’t do it..whatever it takes don’t make these!!! No matter how hard I try I find myself passing the freezer and eating just one… well after the 15th time in the kitchen I have “just one’d” the whole batch~ every time! Especially w those chocolate chips added to it! Resist the urge!!!

      They tend to get a little melty depending on temperature of kitchen – So I like to keep in the fridge.
