Tips for making green beans, sausage, and potatoes as a weeknight one pot meal:

  • Season this meal as desired. The sausage adds lots of nice flavors, but you can turn it up a notch using garlic and Cajun seasoning like I did (or any other savory herb seasonings your family enjoys). It’s easy to adjust to taste.
  • I’ve made sausage, green beans, and potatoes using the Instant Pot as well and it works great, too! Simply place all ingredients including 3/4 cup of chicken broth in the pot. Set the cooking time on HIGH or MANUAL for 3 minutes, followed by a quick release.
  • Some readers have said they make this in a slow cooker! Try 6-8 hours on low until the potatoes are tender.
  • Use the type of potato your family enjoys. I have used reds, russet, Yukon, and baby potatoes. They are all YUM!
  • You can use canned green beans or fresh ones. If using canned, you would just need to throw them in at the end to warm up.

Sausage, potatoes, and green beans in bowl

We love this easy weeknight sausage and potatoes recipe!

This is one of my husband’s childhood favorite dinners and I know it’s popular in the Midwest where he is from. I love that it’s versatile, affordable, so warm and onlineforting, and incredibly simple to prepare. Serve with some crusty bread and enjoy!

The best part is you’ll only have one pot to wash after dinner—yippee!

sausage green beans and potatoes recipe

My Hip teammate Emily tried out this sausage, green beans, and potatoes recipe — here’s what she thought of it…

“Why has it taken me so long to make this meal?! It’s honestly delicious. I subbed the sausage for what I had on hand, nixed the onions (since I didn’t feel like making a trip to the store), and it was still so onlineforting and delicious. I was a little bummed at HOW good this was, because the leftovers I was excited to eat the next day *magically* disappeared. 🤔 This made 4 hearty servings for under $10 so I have a feeling this is going to be a new regular meal in my house.”

Growing up in Pennsylvania there was a similar meal we had often- ham, beans, and potatoes. There were a lot of German families in the area I lived and many made this. I will have to try it with sausage! Thanks!

    • Robyn

I thought the same thing, cbakerd3! Although I live in the South now, I was born in the Lehigh Valley and my family is Pennsylvania Dutch. “Ham and string beans” (as we call it) is something we always make with the leftover ham bone from a holiday meal. 🙂

      • cbakerd3

I moved South as well! Glad I’m not the only one who makes this.

      • Beverly

Us too! Hi from Berks County.

        • Kim

Hi Berks County from Bucks County

    • Lina D (Hip2Save Sidekick)

    • Pensxfan

Haha yep. PA here and we definitely make ham green beans and potatoes

  2. Lala

This is so good and so easy to throw together except I use my insta pot 🙂

    • Lina D (Hip2Save Sidekick)

Yes I like that method also. Thanks Lala!

  3. Dianne Matthews

you should try tossing the sliced sausages with green pepper and onion into the air fryer and in just a few minutes have a great, easy meal.

    • Lina D (Hip2Save Sidekick)

Yum! I’d enjoy that too. I’ve tried that as a sheet pan meal before, and it’s so easy too. 👍

  4. Maggie

Yum ! This looks like my Aunt Karens famous reunion beans but she used bacon !! What an awesome idea to make it a one pot meal !
    Thank You !!

    • Lina D (Hip2Save Sidekick)

Oh interesting – Bacon sounds good too. Thanks Maggie!

  5. jen

I make this adding carrots on a sheet pan in the oven. The carrots & potatoes roast nicely together with a drizzle of olive oil.

    • Lina D (Hip2Save Sidekick)

Yum! I love the idea of carrots. Thanks Jen!

Thanks for the recipe! I have to onlinemend you for giving a shout out to Louisiana Cajun seasoning, it’s the real deal. Seeing it actually made me smile. I live south of New Orleans and I can say I have tried every cajun seasoning there is and this one is our favorite. Not too spicy and not too salty-it’s perfect. It is made by cajuns and used by cajuns. I will try this quick one pot meal this week!

    • Lina D (Hip2Save Sidekick)

Oh yay! That’s the one I tend to grab at the store and we enjoy too! 🙂

  7. Elisebgreen

Lol! This has been a staple in our home forever. Except to make it a quick weekday meal we just cut up potatoes, throw two cans of green beans on it (juice and all), and dice up some kielbasa on top. Simple, quick, and kids love it.

    • Lina D (Hip2Save Sidekick)

Great idea! yes, my kids love this too 🙂

    • Lindsay

We’ve been making it for ages this way too! Easy to do cabbage instead of potatoes for low carb. My kids always gobble it up. 🙂

  8. JulietteY

Thanks for the great idea! This would be an easy dish to sub veggie broth and vegan sausage for vegetarians. Instant Pot version sounds perfect!

    • Lina D (Hip2Save Sidekick)

      Yes, that’s a wonderful idea!

  9. Lisa

I make a similar version in my crockpot only using chicken broth, smoked sausage, & potatoes. My husband loves it.

  10. mrsfick

We grew up with this meal- but used canned potatoes. Now I have to try this with fresh potatoes!!

    • Lina D (Hip2Save Sidekick)

Yes I think you’ll enjoy them also!

  11. tipaye

Reminds me of kielbasa (or smoked sausage), cabbage and potatoes! Butter, salt and pepper is all that’s needed. This recipe looks good, too—thanks!

    • Lina D (Hip2Save Sidekick)

Yes yum, I want to try with cabbage now too 😀

  12. Amber

My family loves this! Even my picky four year old. We made it yesterday in the crock pot! Simple and cheap 😉

    • Lina D (Hip2Save Sidekick)

Yes! So great 😀 thanks for sharing Amber!

  13. Carrie

I make this every time I take a meal to someone. It is a main dish and sides all in one.

    • Lina D (Hip2Save Sidekick)

That’s a great idea to make for someone – super onlineforting 👍

  14. Amy

If you’re weirded out by sausage casings, do you think it would work well to use bulk sausage?

    • Lina D (Hip2Save Sidekick)

Ya you can use another type of sausage. If it’s the uncooked kind, I’d cook it first though.

  15. Nana Donna 2 6

Thanks for sharing your version of this. I now know how to do this on top of the stove. I make something very similar but toss it all in my slow cooker for about 6-8 hours.

  16. browniesmomma

I have been making this for years & love it. Now I make it in the IP. Also a great way to use up leftover ham instead of sausage. I like to throw in some real bacon bits too for extra flavor. Serve it with a side of cornbread. Yum! 🙂

    • Lina D (Hip2Save Sidekick)

Awesome! Great idea on the bacon bits ❤️

  17. Carole Palmer

This dish was WONDERFUL!! I made it in my dutch oven……so easy!!! Consisted of small yellow potatoes, fresh green beans & cabbage…..and, sausage. There are only 2 of us, so had plenty left over for tomorrow night’s dinner!

    • Lina D (Hip2Save Sidekick)

Oh yay and yum! Thanks Carole!

  18. sfc_abby

Thank you for this recipe! From the first day it was posted, this has been our go to meal. My family loves it and it’s easy. Thank you again for all you do!

    • Lina D (Hip2Save Sidekick)

Oh that’s so great! I am so glad – thank you for onlineing back to let us know 😍

  19. Shannon

This looks great! Definitely my kind of easy, quick and healthy dinner recipe. I can’t wait to try it. I wonder if it could be adapted for the instant pot?

    • Lina D (Hip2Save Sidekick)

Yes. I have done that in the past. Off the cuff I’d add maybe another cup of broth and do 4 or 5 minutes with everything in there on high.

  20. MombieZombie

Made this last week and my super picky teen really loved it. Came back to say thanks for an easy and tasty affordable recipe!
