Easy Sausage Corn Chowder

A hearty slow cooker soup that starts with frozen potatoes and ends as a hearty soup featuring sausage and corn.
Ingredients
- 3 c. frozen potato O'brien hash-browns with onions and peppers (half a bag)
- 2 carrots, peeled and chopped
- 1 small onion, chopped
- 4 cloves garlic, minced
- 1 lb. smoked sausage, sliced
- 15 oz. can creamed corn
- 10 oz. can cream of mushroom soup
- 1/2 teaspoon salt
- 2 cups chicken broth

Place all ingredients in the slow cooker. Mix with a large spoon.

Cover and cook on high for 3-4 hours, or the low setting for 6 to 8 hours. Serves 4-5.
Tips for making the best sausage corn chowder:
- An optional step would be to first brown the sausage and onion in a skillet first on the stove. It’s great if you have the time, but honestly, I often skip it. It’s up to you and I wanted to mention it!
- If frozen hash browns are not desired, simply chop up a few fresh potatoes and bell pepper instead.
- Feel free to utilize frozen corn if that’s what you have on hand or maybe frozen chopped carrots. This is easy to adapt to taste and to utilize what is in your pantry.
- Sausage corn chowder is a very easy slow cooker meal, but I am sure you could add all ingredients to a pot on the stove and simmer until the potatoes and carrots are soft and cooked.
