Roasted Tomato & Garlic Bruschetta
Take advantage of sweet summer tomatoes with this delicious appetizer that calls for roasted tomatoes and garlic! Roasting brings out the intensity of the tomatoes and garlic makes the olive oil burst with flavor. Serve this easy to make crowd-pleaser on top of crusty bread. So good! 🙂
Roasted Tomato & Garlic Bruschetta

Easy bruschetta appetizer recipe filled with roasted tomatos and garlic.
Ingredients
- 2 pints cherry tomatoes sliced in half (I used both yellow and red tomatoes)
- 1/4 cup basil, thinly sliced
- 2 cloves garlic, peeled & sliced
- 1/4 cup olive oil
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- loaf of crusty bread, sliced
- 2 tablespoons butter

Preheat oven to 400 degrees.

Toss sliced tomatoes, sliced garlic, olive oil, salt & pepper together and place on a roasting pan.

Bake for 20 minutes. Slice and butter bread. Either toast bread in the oven or use a grill pan on the stove like I did to get those beautiful grill marks.

Mix roasted tomatoes and garlic with the basil and balsamic vinegar. Top slices of bread with mixture. Serve warm or at room temperature. This recipe made 9 slices for me. Enjoy!
