Peanut Butter Chocolate Chip Oatmeal Bars

Baked oatmeal bars with chocolate chips, peanut butter, and banana that are soft like bread and so delicious for breakfast or as a snack!
Ingredients
- 1 cup rolled oats
- 1/4 cup all-purpose flour (or flour of choice)
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 tablespoon coconut oil, melted
- 1 teaspoon vanilla extract
- 2 eggs
- 1/4 cup honey
- 1 ripe banana, mashed
- 1/4 cup peanut butter
- 1/3 cup mini chocolate chips

Preheat oven to 350 degrees and line an 8x8 pan with parchment paper.

To a mixing bowl, onlinebine the oats, flour, baking soda, baking powder, and salt. Mix well.

To the dry mixture bowl, add the coconut oil, vanilla extract, eggs, and honey, and peanut butter, and mashed banana. Mix batter using a spoon, and then fold in the chocolate chips.

Pour batter in the 8x8 pan and spread evenly. Place in the oven and bake for 25-30 minutes until the top is slightly browned and cooked through.

Let cool, and cut into 9 oatmeal squares. Enjoy!
