Consider using a biscuit cutter to cut and serve up an entire pie. Set up your mini pumpkin pie bites on a cake plate or serving tray with whipped cream on each one.

This is a perfect way to dish up those giant $5.99 store-bought pumpkin pies from Costco or Sam’s Club.

More tips for making mini pumpkin pies:

  • After finishing your mini pumpkin pies, don’t forget to use up your pie scraps! I used some of mine to make an amazing pumpkin pie milkshake with vanilla ice cream and pumpkin pie scraps. You could make a smoothie with the pie filling, or add some to your oatmeal or pancakes for breakfast.

These mini pumpkin pie bites are so pretty and taste delicious!

I love this easy no-bake idea. Once when my daughter was younger, her class had a Thanksgiving party at school and we served the Costco pumpkin pie like this for the kids. The mini pumpkin pies were much easier for them to grab and go instead of slices. So fun!

We used to have a Sara Lee outlet in our town behind the bakery. I had to do a reception for our daughter’s senior art show when she was in college and I did that with pecan pies that were $1 each. I just trimmed them into a square and cut them into one inch squares. People raved about them at the reception. Boy we miss that store!

    • Trish (Hip Sidekick)

Such a great idea, Lana! I bet those made a beautiful presentation at your daughters art show! šŸ’•

  5. Sorry not sharing my name on this one LOL

My mother in law REFUSES, to eat anything that either the SIL or DILs makes because she ONLY EATS HOMEMADE food and all her in-laws (her kids and 1 sister too) are too lazy to either bake or cook from scratch. Her reasoning is if, she did it and still does so can we. She forgets we all have high demand stressful jobs and are raising young families. Meanwhile, she has always been a stay at home wife, with a nanny and a cleaning lady.

The first time, I went to a holiday still unmarried at her house, I was warned about this. The other in-laws called me and told me not to take it personally. I did not want to show empty handed because I was also told that she was going to judge me for that.

Young me went to a local bakery bought 3 pies, cut them with cookie cutters in holiday shapes, placed them into fancy metallic foil matching mini placemats with holders. It looked like I spent hours sweating in the kitchen baking them. She eat it and LOVED IT because they were homemade. I never said they were, I just never mentioned they werenā€™t. I have kept this up for years now. She always requests my ā€œhomemade mini piesā€. This year for a summer BBQ, that I couldnā€™t even attend, she requested I send something to help her out because she was ā€œso stressed with the partyā€. I sent mini key lime cheesecake bitesā€¦ yes the COSTCO ones. I bought a couple and cut into lime shapes, placed into fancy shaped mini plates. Apparently, she bragged all day long to her friends about it. Iā€™m still not even close to being favorite person, thatā€™s her own self.

My father in law, brothers and sisters in law are ALL aware of this. We all have a giggle between ourselves when she is raving about it. She begged me to teach one of my recently married sister-in-law how to bake, which of course I obliged. She makes the best three berry Chantilly cake there is. Thanks, Whole Foods. šŸ˜‚

She also, likes to snoop around our houses and because I buy the liners and mats in large amounts because she likes to spring things on us last minute, I keep them in a locked deep drawer in our closed marked ā€œmommy and daddyā€™s toysā€. Yes, I am aware if there is such place as hell, Iā€™m probably going there BUT 1) I do not believe in hell 2) If, I am wrong, Iā€™m sure I will have lots of good onlinepany there and it will be fun.

    • Lina D (Hip2Save Sidekick)

LOL! Wow, what a great confession. Thanks for sharing, that made me laugh. Great idea on the key lime pie! Also I am now gonna check out that whole foods one asap. Lol šŸ¤£

      • Sorry not sharing my name on this one LOL

In all honesty, we choose that cake because personally neither one of us were big fans of it but lots of people do like it. We bought it as a joke between us. We were working between 70 to 80 hours a week during the early days of pandemic and she had the nerve to ask for a homemade birthday cake. My SIL does add fresh berries to the bottom and some around the top. Adds some gold leaf to some of the berries or sprays half on half off with gold. My MIL is partial to gold.

Once, while placing the cake in the car to take it over to my MILā€™s house my SIL hand slipped and made a hole. She covered it with berries, but they looked out of place. When my MIL asked what happened, she was told by my SIL that the cake was ready and she left it on the counter while she went to the powder room, and one of kids must have stuck their fingers in there, so she tried to fix it by moving the berries around. My MIL reply was ā€œthings like that happens with home baked goods. Thatā€™s how childhood memories are madeā€.

Also, most Whole Foods gets their cake frozen, and adds the Chantilly plus berries themselves at the store. The particular WF we go to, makes their cakes and baked goods fresh in house because of heavy foot traffic. Still Iā€™m sure the batter is not made from scratch and is a mix, it just might be fresher than most stores because itā€™s not shipped frozen.

I almost feel bad about doing this to her at times, but then I remember how g-d awful and judgmental she is to most people and I order another pie for her. By the way, the bakery is aware I do this, just in case, if she ever decides to pop in.

They have a picture of her in the back, but frankly itā€™s has been going on for so long that they are used to it. During the height of the pandemic, they even made them for me when they were technically closed. In reality I do think, that even if she was to figure it out, she would be to stubborn to admit, she is not the great foodie, she thinks she is.

        • You donā€™t have to say your name. Most people donā€™t.

There is such place as hell though šŸ˜¬

  6. Ashley Zhu

Hi! What size cm for the biscuit cutter? I was just going to buy the 3 piece set, but looks like I may need the set of 5. Thanks!

    • Trish (Hip Sidekick)

Hey there Ashley! Lina used the two smaller sizes from this set (4cm and 5cm), but it looks like the 3 piece set has one of those smaller sizes too if you just wanted to use that one! Hoping this is helpful! šŸ¤—šŸ’•

  7. Mariellen Parker Jacobs

How many minis would you say you get out of one large Costco pie?

    • Jessica (Hip Sidekick)

Hey Mariellen! You may be able to get about 20, depending on the size of the biscuit cutter you use!
