Low Carb Breakfast Sausage Muffins Using Keto Fathead Dough

To onlinepile this breakfast idea, first make this insanely delicious, easy, and popular Low Carb “Fathead” Dough! We’ve featured this a couple of times in a Fathead Pizza recipe and in a Low Carb Pigs in a Blanket recipe. It takes just a few minutes to make by melting cheese and almond flour together in the microwave, and results in a legitimately crusty bread type dough you can hold!
Tip: If your dough is sticky, try dusting it with a little extra almond flour and place it in the fridge to firm up. I find the longer you keep stirring, it will eventually start to dry out a little into a firm ball you can then manipulate.
You’re also going to need about six breakfast sausage patties. I used a package of ground Jimmy Dean brand breakfast sausage, formed patties, and cooked on the stove. I also chopped up a small amount of onion and bell peppers and sauteed them in the same pan after the sausage. This part is optional and entirely up to you, if desired.
To make, place a sausage patty on top of a flattened piece of dough and set inside a large muffin tin. After it’s baked, the result are these tasty and satisfying bread like stuffed muffins!

Ingredients
- Low Carb Fathead Dough (Click HERE for recipe)
- 6 breakfast sausage patties, cooked
- 1/2 cup diced veggies, sauteed
- 1/2 cup cheese, shredded
Directions

Make dough according to these directions.

Brown sausage patties on the stove until fully cooked and saute diced veggies, if desired.

Grease a large muffin pan.

Separate dough into 6 balls, and use your hands to flatten.

Place a sausage patty on top of the flattened dough and place both into muffin tin so that the dough surrounds the sausage patty. Add some veggies and additional shredded cheese if desired to the top.

Repeat to fill all 6 muffins. Bake at 400 degrees for about 12-15 minutes until golden brown.
My family LOVED this breakfast!
They bake up a little puffy in the oven and have a great texture and taste. I had one this morning, and they still taste great re-heated the next day! You could probably onlinee up with a bacon version that’d be yummy too.
