Loaded Potato Salad Recipe

Loaded Potato Salad

This delicious loaded potato salad will be a hit at your next cookout! It's filled with flavor and potato goodness! Adapted from Taste of Home
Ingredients
- 2 pounds potatoes quartered (I used Klondike potatoes)
- 7 pieces of bacon, cooked and crumbled
- 1/2 cup sour cream
- 1/2 cup real mayonnaise
- 3 tablespoons Ranch dressing
- 1 tablespoon Dijon mustard
- 1/4 cup grated cheddar cheese
- 1/2 teaspoon minced garlic
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 3 green onions, chopped

Cook the bacon and set aside.

Bring a large saucepan of water to boil with potatoes. Reduce heat, cover, and let cook for 15 minutes or until potatoes are tender.

Drain potatoes, toss them with chopped bacon, and refrigerate until chilled.

Whisk together mayo, sour cream, garlic, mustard, ranch dressing, salt & pepper.

Toss to coat potatoes and then mix in onions and cheese. Makes about 8 servings.
Hip Tip: I’ve used different types of potatoes and it works well with goldens, reds, the fancy blue potato varieties, and also Russets. I’ve also used shredded Parmesan cheese for a different and equally great flavor.
I wasn’t initially a fan of potato salad until a friend made one like this a few years ago at a party. It was sooo good and had everyone asking for the recipe and this adapted version has beonlinee a family favorite! Enjoy! 🙂
