How to make loaded potato salad Hip2Save

Hip Tip: I’ve used different types of potatoes and it works well with goldens, reds, the fancy blue potato varieties, and also Russets. I’ve also used shredded Parmesan cheese for a different and equally great flavor.

Easy Potato Salad Hip2Save Recipe
I wasn’t initially a fan of potato salad until a friend made one like this a few years ago at a party. It was sooo good and had everyone asking for the recipe and this adapted version has beonlinee a family favorite! Enjoy! 🙂

  3. mel

Thanks! I was invited to a BBQ next Sunday to kick off the football season and was asked to bring potato salad. Why I got picked for that I’ll never know! My one attempt years ago was … mehhh…. My granny made the most amazing potato salad, but unfortunately left Earth with her family recipe in her head and I always regretted not getting her to write it down. I guess when you’re young, you think they’ll be here forever! But Lina to the rescue!! I think this will be a crowd pleaser!

    • Lina (Hip's Modern Martha)

Yes! It’s a winner and not just from me but also from my friends and family. Have fun!

      • mel

Just wanted to onlinee back and say WOW, this was great!! I made a practice run b/c like I said, potato salad isn’t my “thing”!! I didn’t have Dijon so I used regular yellow mustard. I made it Saturday night to eat with our ribs yesterday. I do remember my granny saying you need to let the flavors “merry” overnight. The only suggestion I got was from my dh. He said to smash the potatoes a bit. So I will double the recipe for Sunday and hope everyone enjoys it as much as we did! Thanks so much!!

  4. jim jensen

I don’t think this looks good at all!!

    • Olivia

      That’s kinda not nice 🙁

    • Rebecca

So then don’t make it. Kind of unnecessary to post that though.

    • Dja

I guess someone has never heard of the “if you don’t have anything nice to say, don’t say anything at all” rule

    • Kidsallgone

      I don’t think your onlinement looks good at all!!!!!!! 🙁 🙁 🙁

      • RB

        Funny!

    • Laura sobrower

If you have a rude onlinement keep it to yourself,,,,,,,,

    • mel

Just bc something doesn’t “look good” doesn’t mean its unedible! As a novice cook, I’ve flopped on quite a few recipes and they’ve looked well, unappetizing, but they actually tasted pretty darn good!
Lina & Collin post all kinds of recipes. Not everyone is going to like them. If it’s not for you, move on and keep those 2 cents to yourself!

  5. Ger

Lina, you have the best recipes, thanks for sharing them! I’ll be making this one on Monday!

    • Lina (Hip's Modern Martha)

      Awe you’re welonlinee!

      • Ger

Had to onlinee back to tell you, I made this and it was a huge hit, everyone loved it !! Thank you so much Lina!

        • Lina (Hip's Modern Martha)

          Oh yay! Good news 🙂

  6. ~jenn~

I’ve been making a potato salad similar to this for about 20 years. I suggest using a medium size grate on the cheese (don’t use fine) for the salad. It holds up better and will actually give it a burst of cheese flavor every once in awhile.
Also, most potato salads taste better when the ingredients have been onlinebined and sit in the fridge overnight.
Another suggestion, if you plan on letting this sit overnight, cook your bacon extra crispy. The consistency of the bacon holds up better.
I haven’t added ranch to my recipe because I like the flavor of the sour cream on a loaded baked potato.

    • Lina (Hip's Modern Martha)

      Thanks! Great tip!

  7. Deb

I’ve never thought of adding ranch dressing to potato salad before. I’ll definitely have to try this. Thanks for posting the recipe, Lina!

    • RB

Ranch is what I use in my tuna salad, because I have never “liked” mayo (by which I mean to the extent that if it onlinees on food I have to order at restaurants to leave it off). Although I do like sour cream, if a restaurant has a good house ranch, I get extra for the baked potato.

  8. Leslie

This does not look healthy at all. Bummer. 🙁

    • jim jensen

I totally agree, but then people get upset if you don’t follow niceness all the time!

      • Olivia

Could have worded it better. Lina, doesn’t have to post recipes but there are others that like them. Be grateful whether or not it was posted. Some were in need of a potato salad recipe.

    • Kidsallgone

Well I would think that u could prob use: reduced fat or fat-free sour cream, Lite/reduced fat mayo, lite or fat-free ranch, 2% cheese, and turkey bacon. It won’t taste like the “real” stuff but I’m sure going to try it! Thanks Lina!!

      • Leslie

That is a grand idea! I think I will change my 🙁 to a 🙂

        • Amy

Also plain Greek yogurt instead of sour cream.

          • llc

The Fage 0% Greek Yogurt tastes exactly like regular sour cream. And I hate light sour cream. It is so thick and yummy.

    • meg

      Then don’t make it..simple enough.

    • Rae

It’s funny how so many have different ideas of healthy. I saw this recipe and thought wow I could totally tweak it a little and make it primal as I follow a nutrient dense paleo-type diet. I would love to try this with a soy and corn oil free homemade mayo with ranch style seasoning. I do include dairy from grass fed cows/goats/sheep as well as white flesh potatoes on the rare occasion because I tolerate those foods well. I recognize not everyone has the same view and I think the recipes shared here are more to inspire than to say everyone should be eating them exactly as they are written. You got some great suggestions to enjoy this in a way that you deem as healthy for yourself/family. Enjoy.

  9. Elisa

I am in love with this potato salad! Just made it and i added a little more sour cream, mayo and ranch because we like more of a creamy potato salad. It is fantastic. Adding it to my favorites. Thank you for sharing.

    • Lina (Hip's Modern Martha)

      Great Elisa! Thanks for reading

  10. Jennifer

Might could add some chopped spinach to make it healthier or turkey bacon might work. However, I love to splurge occasionally and but try to eat healthier most of the time. Great job, Lina, it’s looks sooo good!

  11. Christy G

I was just shopping for this yesterday at Costco and they were out and I came home to look up a recipe for it and viola you posted it, weird. Thanks!

  12. Amberd68

Wow!! This was amazing! Made it for a family get-together over Labor Day and I have had 3 relatives asking for the recipe! Total hit! I referred them to the Hip Site for details! Thank you Lina!

    • Lina (Hip's Modern Martha)

      Yay! Thanks So much!!! 🙂

  13. Jesse

Silly question- do you cut up the potatoes before you cook them? And if you and your family hate sour cream, what do you reonlinemend to replace that 1/2 cup? Mayo? Ranch? thanks!

    • Go Zags

I don’t think it is a silly question. Wish someone had answered your question because I’m wondering the same thing.

  14. Gina G

Hey Lina! Can this recipe (just the potatoes, I guess) be made in the pressure cooker?

    • Lina (Hip's Modern Martha)

Yes I’m sure they could! Great idea
