In a large soup pot, break and cook the noodles to al dente. Drain noodles, add a drizzle of oil, and set aside.

Place the pot back on the stove and heat up olive oil on medium. Sauté the onion and garlic for a few minutes.

Add in meat with oregano. Crumble and brown until cooked.

Stir in the tomato paste. Add the chicken broth, tomatoes, and 1 cup water.

Bring soup up to a simmer and let it slightly reduce for about 10 minutes.

Stir in the noodles, basil, Parmesan cheese, and Ricotta cheese.

Tips for making this easy lasagna soup:

  • Keep a tube of tomato paste handy in the fridge to use for recipes like this one instead of opening a can. Then you can easily use as needed for other recipes.
  • This soup is highly adaptable to taste. For instance, add some red pepper flakes to make it spicy, or use spicy Italian sausage.
  • Next time I may try sautéing a bell pepper and zucchini or spinach for added vegetables along with the onion!
  • I used ricotta cheese in this soup and some for garnish, however, if that isn’t appealing you can pour in a little heavy cream at the end instead.

I love how the broth is AMAZING and so flavorful from the sausage. Even people like my hubby who claim to not love soups as a meal really enjoyed it. The leftovers are yummy too warmed up in the microwave the next day. Enjoy!

    I think it’s the Barilla pasta onlinepany makes a tiny lasagna noodle that is easier than breaking up the full size lasagna noodles. A wonderful PTA mom made this in a crockpot and she left the noodles separate in a gallon ziplock to add your own noodles and they didn’t get mushy soaking in the soup.

      They are called Campanelle noodles and I get them from Barilla, I use them when making this soup all the time! Perfect size and shape.

      Speaking as a 2+ year vegetarian, why do you need a separate recipe on how to make this vegetarian?? No meat, sub vegetable broth for chicken! I would add baby spinach and maybe garbanzo beans. If you wanted a spicy kick (and are ok with meat substitute), Trader Joes soy chorizo might be an interesting addition!

      You could replace meat with lots of chopped veggies or even that product Beyond Meat plus add more spices like fennel seed and Italian spices.

    I’m just having a hard time wrapping my head around the fact that there’s people who don’t like soup… haha I think I could live on soup.     I’m not sure if my family likes ricotta cheese. We don’t usually put it in our lasagna. Is there another type of cheese that could be substituted?

      Sure – cream cheese, goat cheese, or fresh mozzarella. I’d use a cheese they like 🙂 You can omit all together and instead use a little cream in the soup. The original recipe actually uses some cream with the broth. hope that helps.

    Made this 2 nights ago for dinner and it was fabulous! I didn’t have crushed tomatoes so I used a can of tomato sauce and a can of stewed. I also added fresh spinach and a bayleaf. Even better the next day. A keeper for sure!

      Yes, I made a very similar recipe from PInterest. You can find it under Carlsbad Cravings. It has a few extra ingredients, like the bay leaf you mentioned, and I think that’s what makes it extra tasty.
