Easy Baked Almond Meal Chicken Fingers

Ingredients

  • 4 skinless boneless chicken breasts, sliced into chicken tenders
  • 3/4 cup almond meal/flour
  • 1 teaspoon ground paprika
  • 1 teaspoon ground garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

Preheat the oven to 350 degrees.

Using a small paper bag or Ziploc bag, shake seasoning and almond meal together. Place chicken tenders in bag and shake until well coated. I reonlinemend only placing 1-2 chicken tenders at a time in bag.

Place the coated chicken on a greased baking sheet. For best results, use a metal cookie rack stacked on top of a cookie sheet to elevate chicken for even cooking.

Bake at 350 degrees for about 25-30 minutes until internal temperature reaches 165 degrees.

    Mmmmm!! I have been looking for recipes for my daughter who will be a year old next month. She loves hand held food and I don’t like the idea of buying her frozen tenders nor from a restaurant. God only knows what really goes into them. *shudder*

      @dropofrain, my daughter has a form of rheumatoid arthritis and is onlinepletely grain free and low starch. This diet is reonlinemended to reduce inflammation and has helped so much with back pain. She’s only 22.
