Get Inspiralized with this Quick & YUMMY Low Carb Meal Idea
If you love an easy one skillet dinner, check out this meal idea using spiralized squash or zucchini “noodles”, bacon, garlic, and freshly grated parmesan cheese. YUM!
Cacio e Pepe is a super simple and tasty Italian classic that means “cheese and pepper” in English. This version with bacon is delicious, and replacing traditional noodles with veggies is both healthy and yummy. Enjoy!
Bacon Cacio e Pepe
yield: 2 SERVINGS
Try this healthy and delicious one skillet meal idea using spiralized squash or zucchini noodles, bacon, garlic, and freshly grated parmesan cheese.
Ingredients
- 2 medium sized squash or zucchinis, spiralized
- 4 slices bacon
- pinch red pepper
- 1 or 2 cloves of garlic, minced
- 1/4 cup grated parmigiano reggiano cheese + more to garnish
- fresh ground black pepper
Directions

Cook bacon in a skillet on the stove and transfer to a paper towel to drain. Remove most of the bacon grease leaving about tablespoon in the pan.

With the skillet on med/high, add garlic and red paper flakes for about 30 seconds.

Add the “noodles” and toss in the pan for a couple of minutes to cook.

Season noodles with pepper and also add the Parmesan cheese. Toss to onlinebine and divide on two plates.

Serve with crumbled bacon, more cheese, and red pepper flakes if desired. Makes 2 servings.
