Easy Foil Packet Potatoes on the Grill (Great Recipe Idea for Camping/Tailgating)
Next time you fire up the BBQ for a summer cookout, consider preparing these easy and delicious roasted potatoes in foil packets. They are so simple and always turn out mouth-watering! These potatoes are also the perfect meal/snack/side dish to make while camping.
This is my favorite way to make potatoes in the summer because it doesn’t heat up the kitchen. Plus, leftovers make really great breakfast potatoes in the morning. A prep ahead idea for camping would be to place seasoned and coated potatoes and onions in a large Ziploc bag and just bring foil along to grill. You can also use the same method for your favorite roasted vegetables. Yum!

Ingredients
- 3 lbs. Potatoes, chopped in about one inch pieces (I love Golden Potatoes)

Plan to split chopped potatoes and onions in two or three packets of foil or create individual packets for each person.

Tear off a large piece of foil and place potatoes & onions on top.

Evenly coat & toss with olive oil and seasonings. Cover with another piece of foil and seal sides well, leaving room for steam.
