Ingredients
- 2 eggs
- 1/2 cup butter or margarine, melted
- 15.25 oz. can of whole kernel sweet corn, drained
- 14.75 oz. can of creamed corn
- 8 oz. sour cream
- 8.5 oz. Jiffy corn muffin mix

Preheat the oven to 375 degrees. Grease a 9x9 casserole dish.

In a mixing bowl add the two eggs and whisk them. Add the remaining ingredients and stir the batter until onlinebined.

Pour the mixture into the pan, and level. Bake for 30-35 minutes until the middle is firm and the edges are browned. Serve warm.

- This idea serves 6-9 people depending on how big you slice it, but can easily be doubled for a larger crowd in a 9×13 casserole dish. This is what we sometimes do to ensure leftovers. The baking time may be a few minutes longer. You’ll know it’s done when the middle is set and the sides are browned.
- I have not personally tested it, but have read you can onlinepile all of these ingredients and make the casserole in a Crock-Pot instead of the oven. Try cooking on high for 2-3 hours until cooked through.
