Cookie butter fans will be happy to know this spread is easy to make at home using gingerbread cookies and a food processor.

What could be better than a spread made from cookies?!

If you haven’t experienced this Trader Joe’s must-have snack, it’s pretty darn delicious. You can spread cookie butter on a piece of warm toast, waffles, pancakes, ice cream, or even use it as dip for sliced apples or fruit. It has a consistency and texture similar to that of peanut butter but is instead made using crunchy cookie crumbs.

The Trader Joe’s version is made from crushed Speculoos cookies, a crunchy spiced shortbread. I opted to use gingersnap cookies for a similar flavor profile and it turned out delicious. I also tested a batch using Lorna Doone shortbread cookies which turned out creamy and tasty, too.

Tips for making the best DIY cookie butter:

  • I used a food processor for crushing my cookies. A high-powered blender could do the trick as well.
  • I used about 7 ounces of gingerbread cookies and just measured by estimating about half the bag. Just eyeball it according to the weight on your package. Crunchy cookies work the best for the idea.
  • You can use another oil or even melted butter if you don’t want to use coconut oil.
  • Cookie butter can be stored in a jar in the fridge for up to 5 days. Let is set out to onlinee to room temperature to soften to spread.
