Chipotle-Inspired Cilantro Lime & Black Bean Bowl
Craving Chipotle?
As promised, this week I’ll be sharing five super simple, delicious, and budget-friendly meatless recipes. If you haven’t already, be sure to check out the post here where I offer easy-to-follow directions on How to Cook Dried Beans.
The recipe I am sharing with you today was inspired by Chipotle, one of my favorite places to eat – I especially love their burrito bowl! This homemade version of Chipotle’s cilantro lime rice bowl with black beans, sautéed bell peppers, and onions is a perfect meatless meal that you can customize to include whatever toppings your family enjoys.
Chipotle Inspired Cilantro Lime Rice Burrito Bowl
yield: 4 SERVINGS

Delicious Lime and Rice Burrito bowl recipe full of great flavors inspired by Chipotle.
Ingredients
- 1 teaspoon vegetable oil or 1 teaspoon butter
- 2 teaspoons fresh cilantro
- 2/3 cup white Basmati rice
- 1 cup water
- juice from 1 lime
- 1/2 teaspoon salt
Directions
1
In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Sauté onion and bell peppers and season as desired. (I used taco seasoning, and it was great!)
2
Add rice and lime juice, stir for 1 minute. Add water and salt and bring to a full rolling boil. At boiling, cover and turn down to simmer over low heat until rice is tender and the water is absorbed – about 25 minutes.
3
Add in the cilantro and fluff rice with a fork. Assemble bowl by starting with lettuce and layer rice, beans, peppers, onions, and corn. Add any additional toppings desired.
This is such a gorgeous looking meal that’s both filling and great tasting. The cilantro lime rice really does taste like it was made at Chipotle, and I loved using the black beans that I made last week too. My meat and potato-loving hubby really enjoyed this meal as well.
