Tips for making this chicken casserole with zucchini:
-
- This recipe is extremely adaptable. You can use rotisserie chicken instead of cooked cubed chicken breast meat, or swap sour cream for plain Greek yogurt.
- Have a larger family? This could easily be doubled to make a larger batch. You may have to use a larger casserole dish or use two 9×13.
- If you have yellow squash, try using that instead! I am all for using what you have on hand.
- Make sure to reserve a little stuffing mix for the topping before putting it all in.
- Not a fan of canned cream of chicken soup? It’s actually easy to make your own homemade cream of chicken soup instead!

I can’t decide if the crunchy bits of stuffing on the top are my favorite or the tender bites of zucchini. I mean, I could have eaten this pan just myself, but ultimately decided to share it with my family (and they loved it too). 😊
