Cheesy Chicken, Bacon, and Rice Casserole

Ingredients

  • 10.5 oz. can Campbell's Condensed Cream of Bacon Soup
  • 1 and 1/3 cups chicken broth
  • 3/4 cup long-grain instant white rice, uncooked
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups frozen mixed vegetables
  • 1.25 lb. boneless skinless chicken breast halves or tenderloins
  • 1 cup cheddar cheese, shredded
  • 4 pieces of bacon, cooked & crumbled

Directions

Pre-heat the oven to 375°F. Stir the soup, broth, rice, onion powder, garlic powder, black pepper, and vegetables in a 2.5-quart casserole dish.

Top the rice mixture with the chicken. Cover the baking dish with foil.

Bake for 55-60 minutes, until the chicken is cooked through and the rice is tender. Remove foil, and top with the cheese and bacon pieces. Place back into the oven to melt cheese, about 10 minutes.

Try baking this delicious chicken and bacon casserole with rice! If you’re in the mood for a warm meal that the entire family will enjoy, this idea is worth a try.  The addition of bacon and cheese is a yummy twist to this classic Campbell’s Cheesy Chicken and Rice Casserole, and I think you’ll love it!

Bacon just makes everything better!

I picked up the new cream of bacon soup for this recipe, and it tasted YUM! You can use cream of chicken if desired instead. In fact, this whole idea can be altered to your family’s tastes, including the type of veggie and how you season the chicken. Also note, I used chicken tenders, but you can use breasts and maybe slice them into smaller pieces so they will cook evenly.

A 2.5-quart casserole dish worked great for this recipe. Check out my cute, vintage-inspired Corningware Cornflower set!

Hip Tip: Use a parboiled long-grain rice like Uncle Ben’s, just so there won’t be any issues with rice not cooking all the way. My rice was a nice texture. Not too soft, not too hard.

      So I looked up similar ideas for you in the IP and seems like it would work for a cook time of 7 minutes. Maybe cut up the chicken first in smaller pieces. I haven’t tried this myself but wanted to share my best guess.
