Blueberry Kiwi Mojitos Recipe (Alcoholic AND Non-Alcoholic Versions)

Blueberry Kiwi Mojitos

Refreshing mojito recipe that is perfect for any event!
Ingredients
- 11.5 oz. container fresh Blueberries – reserve half to be crushed & half for garnish
- 5 Kiwis, peeled
- 1 Kiwi, sliced for garnish
- juice from 2 Limes
- 1 and 1/4 cups light Rum
- 2 cups sparkling water
- 1/2 cup sugar
- handful of Mint Leaves
- blue sugar for rim (optional)*
- ice cubes – a few in each glass or 2 handfuls in a pitcher

Place five kiwis in a food processor or high powered blender with sugar, lime juice, and rum. Blend until you have a chunky puree.

Crush half of your blueberries with a muddler or potato masher. Moisten rims of glasses with water or a lime and sugar the rims, if desired.

In a large pitcher or individual glasses, layer kiwi puree, a few ice cubes, mint leaves, crushed blueberries, sparkling water, and top with whole blueberries and sliced kiwi. There really is no wrong way to layer this – I ended up just mixing it all around in the pitcher before drinking anyways. Makes 6-8 servings.
I made these over the 4th of July weekend and they were a big hit! If you prefer a non-alcoholic beverage, leave out the rum and use lemonade or more sparkling water. Enjoy!
