    I’ve never used this before but want to try it. Anyone have some good recipes?

      We literally use it Pl ace of cream in almost any cooking (not necessarily baking) recipe. For example, instead of heavy cream in Alfredo, this can be used. A tip I got years ago was to refrigerate it, then scoop out the solid chunk (it separates once cold), and that solid part is seriously the best dairy substitute on earth! It doesn’t have a coconut flavor; once it separates, that seems to stay with the liquid, but the solid is totally unassuming. I’ve also made “sour cream” and creamy dressings with it!

      Here’s a recipe for Chicken Panang curry:

      Panang Curry
      2 or 3 tablespoons Panang curry paste
      Coconut oil
      I can coconut milk
      Some skinless, boneless chicken cubed or sliced into strips (1 breast or 4-5 chicken tenders)
      6 dried kaffir lime leaves, whole
      2 tablespoons palm sugar
      2 tablespoons fish sauce, or to taste
      Sliced red, yellow and green bell peppers
      2 tbsp basil leaves

      Warm the curry paste in the coconut oil in a large skillet over medium heat until fragrant. Stir the coconut milk into the curry paste and bring to a boil. Add the chicken, kaffir lime leaves and basil, cook and stir until the chicken is nearly cooked through, 10 to 15 minutes. Stir in the palm sugar, fish sauce and peppers. Simmer together for 5 more minutes. Taste and adjust the saltiness or sweetness by adding more fish sauce or coconut sugar, if necessary.
      Serve over Jasmine Rice

    Great quality and organic first-pressed coconut milk! First-pressed coconut milk is used in a lot of South-east Asian dishes/ curries (which I mainly use for) and it adds amazing flavor. I usually get mine from Costco but this is a great deal. Only wish it came in BPA-free cans.

      Aren’t aluminum cans naturally free of BPA? I thought BPA was only found in plastic.
