Buffalo Chicken Zucchini Boats

Ingredients

  • 1 pound ground chicken or ground turkey
  • 1/2 cup buffalo chicken wing sauce
  • 4 medium sized zucchini
  • 1/2 cup Italian blend cheese, shredded
  • Optional Toppings: Blue cheese crumbles & chopped green onions

Directions

Crumble and cook ground meat on the stove. Stir in wing sauce and set aside.

Cut zucchini in half lengthwise and scoop out the center. (A melon baller kitchen tool works well for this.)

Place zucchini on a baking sheet or dish.

Spoon ground meat into the middle of zucchini halves, and sprinkle shredded cheese evenly over the top of each half.

Cover pan with foil and bake at 400 degrees for about 30 minutes, or until zucchini is tender.

Top with sliced green onion and crumbled Blue cheese, if desired.

Buffalo chicken and zucchini boats

I actually used ground turkey and it turned out delicious! You could also use leftover shredded chicken, chopped grilled chicken, or even a can of chicken in a pinch.

This is the type of meal that’s super yummy and happens to be low carb!

I love when that happens. Such a great way to use up summer zucchini as well!

    What do you do with the leftover zucchini centers?

      When I use my spiralizer I just chop that middle peice that is leftover and add it in with the mix. I don’t waste anything.

      You could always chop zucchini first and put it in with meat. I liked chopped zucchini in spaghetti sauce so I used it for that. Hope that helps.

    I always live these recipes but I’m a household of 1 and even trying to half the recipe I always end up wasting too much or get tired of it. Looks good through.

      You could always quarter or half the recipe, ask butcher for 1/4# or 1/2# ground turkey/chicken & only buy 1-2 zucchini. Just a thought, then you’d possibly have a leftover for lunch or another dinner.

      What you could do is just freeze the cooked meat filling and save it for another meal.

    You could slice the zucchini lengthwise making the strips into a pizza crust, first bake them, then add toppings and bake again.
