3-Ingredient Banana Oatmeal Breakfast Cookies
Need a quick make-ahead breakfast idea?
If your mornings will soon be filled with busy back to school routines, consider baking these portable Oatmeal Banana Breakfast Cookies. They are super simple with just two main ingredients and can be made with so many different add-ins to customize for your family’s taste.
For these cookies I added peanut butter and sliced almonds, but you could add raisins, cinnamon, coconut flakes, chocolate chips, walnuts, berries, and any other items you’d normally add to oatmeal.
TIP – For sweetness, make sure to use over-ripe bananas.

Ingredients
- 1 cup old fashioned oats
- 1 cup over-ripe banana, mashed (about two bananas)
- 2 tablespoons peanut butter* (optional)
- *any other add-ins such as chopped nuts, chocolate chips, or dried fruit
Directions

Mix oats and mashed banana together well.

Stir in peanut butter and any other add-ins.

On a parchment paper covered or non- stick baking sheet, scoop out about 10-12 cookies.

Flatten cookies a little, and bake in the oven at 350 degrees for about 11-12 minutes until slightly browned. Let cool, and serve.

Store any leftovers in an airtight container.

The recipe as is yields a cookie that’s not meant to be super sweet. It’s more of a baked oatmeal consistency. If it’s not sweet enough for your taste, simply add a little honey, brown sugar, or sweetener of choice before baking.
My family is crazy for anything oatmeal related and these are perfect to grab for a quick and satisfying breakfast.
I like them re-heated a little with coffee or a glass of milk. YUM!
