Homemade Cashew Crunch

yield: 24 SERVINGS

Ingredients

  • 1 cup butter
  • 1 cup white granulated sugar
  • 1 tablespoon light corn syrup
  • 10 oz. Cashews

Directions

Grease a largeΒ baking sheet with butter and set aside.

In a saucepan on the stove, melt butter, sugar, and corn syrup together on medium heat. Stir to onlinebine.

Turn heat up a little to med/high and add cashews. Use a nonstick silicone spatula or wood spoon to stir frequently.

You'll see the mixture start to bubble and cook. Make sure to stir frequently so it does NOT burn.

Keep stirring and cooking to heat to 300 degrees using a candy thermometer. Or you can do what I did and keep a bowl of cold water next to stove. Drop a small amount of syrup in and if it immediately turns solid and hard, it's ready. You're looking for a medium brown color, not super dark or it may be burning.

Pour mixture onto the greased baking sheet and spread as thin as possible very quickly. It will start to harden right away.

Let cool and then break into pieces.

Store in airtight container.

Did you know I have my fair share of kitchen fails?

In fact, I had a major Cashew Crunch FAIL while testing a different microwave recipe! It onlinepletely burned! LOL. So I definitely reonlinemend the stove method where you can watch and stir frequently to avoid burning and ruining perfectly good cashews! 😊

      Oh man, I somehow got a free Karo syrup recipe book (I’m sure on here years ago lol) you wouldn’t believe the things that can be made with this stuff! I’m am sure you could Google it. Hope that helps!

    The corn starch is necessary. My SIL make this every year before Christmas and it’s a 2 man job!! A person to pour and someone to spread because it hardens fast!!! You will get thick pieces if you don’t spread fast enough. πŸŽ„ Merry Christmas!

    I make the microwave version of this every year, and it’s my most requested Christmas candy , I’ve had a year or two where it’s turned out a little more chewy then crunchy(which means it wasn’t in the microwave long enough ) but never had it burn I find it pretty easy to keep an eye on it even in the microwave

      I think you can you use your preference on that. I use roasted lightly salted ones from Walgreens I had snagged on sale πŸ˜€
