Japanese Cucumber Salad by Hip2Save.online. Try this refreshing salad at your next dinner.

If you’re looking for a fresh and cool summer side dish, try this simple to make Asian-inspired Sesame Cucumber Salad. It makes an excellent side dish for your next gathering and/or a great snack to keep in the fridge!

Sesame Cucumber Salad

Ingredients:
(Adapted from Chow.online)

2 English cucumbers, peeled & thinly sliced
1 teaspoon salt
1/2 small red onion, thinly sliced (optional but yummy!)
2 tablespoon rice wine vinegar
1 teaspoon sesame oil
1 teaspoon sugar
2 tablespoons sesame seeds

Directions: Slice cucumbers and onion very thin (I used a mandolin slicer). Place cucumbers in a colander or salad spinner and drain liquid. You can also use a kitchen towel to squeeze out liquid. Salt cucumbers. Mix together vinegar, sesame oil, and sugar. Toss with onion and cucumbers and top with sesame seeds. This dish tastes even better when marinated in the refrigerator for a few hours. Makes 4 servings.

    I add salt into the bowl with sliced cucumber, mix and let it sit a while.
    Then squeeze liquid out.
    Add rice vinegar and sugar.
    That’s how I make it.
