Homemade Veggie Fried Rice

Making homemade fried rice at home is a super easy and delicious way to use up odds and ends from your fridge. It’s a simple dish to make and your whole family will LOVE it!

Homemade Veggie Fried Rice

Ingredients
- 3 cups cooked brown rice (I used quick-cooking rice)
- 2 and 1/2 cups chopped veggies (I used a mix of red onion, shredded carrots, edamame, corn & peas)
- 1Â clove minced garlic
- pinch of ground ginger
- pinch of red pepper flakes
- 3 tablespoons canola oil
- 2 eggs plus 1/8 teaspoon sesame oil
- 2 tablespoons soy sauce
- 1 teaspoon of sesame oil

Heat oil in your largest skillet on medium-high heat and cook/brown eggs on both sides with a little sesame oil (cook eggs more like a well-done pancake as opposed to scrambled eggs). Move cooked eggs to a cutting board, chop, and set aside.

Heat canola oil in the pan and add onions, garlic, carrots, ginger, and red pepper flakes. After a couple of minutes, add rice, chopped eggs, and remaining veggies to the pan. Let fry a couple of minutes and stir occasionally. Then add soy sauce and sesame oil. Enjoy!
Hip Tip: Cold rice from the night before is a little drier and works great for stir fry. Next time you cook rice, cook a large batch and consider freezing the extras for future batches of fried rice.
