Slow Cooker Honey Sesame Chicken

yield: 5 SERVINGS

Ingredients

  • 6-8 boneless, skinless chicken thighs or 4 chicken breasts, defrosted
  • Salt and pepper
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 1/2 cup low-sodium soy sauce
  • 2 tablespoons grated fresh ginger (optional)
  • 2 tablespoons olive oil or sesame oil
  • 1/4 teaspoon red pepper flakes
  • 4 teaspoons cornstarch
  • 1/3 cup water
  • 1 tablespoon or more sesame seeds
  • 3 scallions, chopped
  • 4-5 servings of your favorite white or brown rice

Directions

Place chicken in the slow cooker and lightly season both sides with salt and pepper.

In a medium bowl, onlinebine onion, garlic, honey, ketchup, soy sauce, ginger, oil, and red pepper flakes. Pour over chicken. Cook on low for 3-4 hours, or high for 2 hours.

Remove chicken to a cutting board, leaving sauce. Shred chicken into bite-sized pieces; set aside.

In a small bowl, dissolve 4 teaspoons cornstarch in 1/3 cup water; add to crock pot. Stir to onlinebine with sauce. Cover and cook sauce on high for ten more minutes, or until slightly thickened.

Serve with your favorite rice, and top with chicken, spooning the sauce over top. Sprinkle evenly with sesame seeds and chopped scallions.

Don’t you love it when you try a dinner recipe found via Pinterest and it turns out to be fantastic? This one is a winner for my family so today I’m passing it on to you. If you love Asian inspired food, then you’ll really like this! I added fresh ginger to the original recipe and it takes it to a whole new level. Plus, your kitchen will smell like PF Chang’s! 😋

You can even use frozen chicken – just double the cooking time. This recipe is a little extra work at the end due to the shredding of the chicken and thickening of the sauce with cornstarch.           I’ll just add that we love to use 3 breasts, keeping the sauce volume as listed in the recipe.. Then we dice up a pepper (red or green, whatever we have on hand) and toss in to lightly sauté after the chicken cooks. Then stir it in with chicken, sauce and pineapples. We serve it with jasmine rice. So so yummy!

    This looks yummy! Is there anything I can substitute for the ketchup? I am doing a clean eating challenge and ketchup is not allowed.

      Since it’s such a small amount, try mixing a small amount of tomato paste, vinegar, and sugar for a similar taste.

    Can you substitute with powdered ginger? Maybe one or two tsp.

      You could but use very little. I also love ginger paste (found in the produce section) for the convenience 🙂

    Instead of shredding my chicken by hand I just put it in my Kitchenaid mixer with the paddle for a couple minutes and voila! Shredded chicken without all the work 🙂

    Isn’t your husband doing gluten free? I say that because I have seen you post gluten free recipes before. Soy sauce has wheat in it so be careful if he is following it for health reasons. Thanks for all that you do!

      There are gluten free soy sauces available. Kroger’s brand might even be. Certainly check each and every purchase as production changes unexpectedly!

      You can add what you feel is best. I would not say it’s spicy though because of the honey. Hope that helps 😀
