  From a recent free Kindle book I got on recipe substitutions it said you can substitute 2 Tablespoons of cooking oil + 1 tablespoon of water or 1 teaspoon of cornstarch + 3 tablespoons of additional liquid when baking. I haven’t tried it.

  I have a son who is severely allergic to peanuts and eggs also. I have been using
  Ener-G Egg Replacer for years. Buy it in health food stores or on Amazon.online. Works great!

  You can use firm tofu and crumble it up to make “scrambled eggs” . Saute it in a skillet with a tbsp of hot oil, season with garlic, onions, parsley, a dash of turmeric(for color), and salt. nutritional yeast is good too if you can find it. or add cheese- cow milk based or vegan for cheesy scrambled tofu.

  Thanks. I have an email with just 1 letter in the address and many times it isn’t recognized. Tried your trick and sent the invite to that one and another. It came in on the other one, using my 1 letter address as the from. Ours is not to reason why . . .

  Vegetarians can substitute a flax seed mixture for eggs in selected recipes like pancakes, muffins and cookies. These baked goods will be slightly chewier than normal, and the volume will be decreased. The formula for egg substitution is: 15mL (1Tbsp) Milled Flax Seed, plus 45mL (3Tbsp) water = 1 egg. Mix with water, and let sit for 1-2 minutes. Add to the recipe as you would one egg

  You can replace 1 egg with 1 tablespoon soy flour + 1 tablespoon water. I have done this many times when I bake and it’s good.
