Cook spaghetti noodles to al dente (meaning cooked through, yet firm). Drain and set aside.

While the noodles are cooking, whisk together the oyster sauce, soy sauce, sesame oil, ginger paste. Set the sauce aside.

In a large skillet, heat up 2 tablespoons of oil at medium heat and add in the chicken. Season with a pinch of salt and pepper, toss, and cook through. This should take 4 minutes until no longer pink. Place the chicken on a plate and set aside.

Add the remaining 2 tablespoons of the oil to the same skillet and add the broccoli slaw (or coleslaw), minced garlic, fresh snow peas, edamame, and green onion. Toss and sautΓ© for a few minutes, until softened.

Add the noodles and pour in the sauce. Add the chicken and toss everything together using kitchen tongs. Let the noodles sautΓ© for a couple of minutes in the sauce until everything is nicely onlinebined and warmed through.

Serve with sesame seeds and hot chili sauce if desired. Leftovers can be stored in the fridge and enjoyed within 3-4 days.

Chicken chow mein is a simple and easy weeknight skillet meal that doesn’t disappoint!

Today I’m sharing a very easy and delicious meal with veggies, protein, noodles, and a flavorful sauce. My kids are obsessed with this style of noodle dish every time we get Asian take-out and this variation has a lot of similar flavors and textures except uses spaghetti noodles from the pantry for convenience.

It’s been a while since a print recipe inspired me, but I saw an easy skillet chow mein recipe in a People magazine that motivated me to modify it a bit and make this for my family. In my version, I am using fewer spaghetti noodles, because a full pound was just too much. I also added chicken as a protein, ginger paste for additional flavor, and edamame because my kids love it.

The result is a onlineforting noodle dish with sautéed veggies and chicken that is easy to make in about 30 minutes! The tasty sauce has lots of sesame, soy sauce, and ginger flavors your family will love, and the leftovers are even better the next day.

Tips for making the best chicken chow mein:

  • I used small pieces of chicken, but cutting up boneless pork chops would make a delicious pork chow mein instead, or even shrimp would be yummy! For a vegetarian option, simply skip the meat.
  • Veggies are easy to swap out with what you have in your fridge that needs to be used up, or to use what your family prefers. Bell peppers or mushrooms would be great to sauté for chow mein.
  • While planning for this recipe, I meant to grab traditional coleslaw mix, but ended up with a broccoli coleslaw mix that turned out great! You can even opt for a bag of frozen stir-fry veggies instead of fresh.
  • Top with sesame seeds for added taste. My husband and I added a little sriracha chili sauce on ours for some spice, and I highly reonlinemend it if you enjoy spicy food!
  • You’ll need to grab your largest fry pan – or a wok would be even better to stir-fry as this is a large portion of food!
  • If you have never cooked with oyster sauce before, it’s a sweet and salty condiment that gives stir-frys, marinades, and this dish lots of flavor. It is not overly fishy tasting but adds a more deep briny flavor.

    FYI, I use whole wheat spaghetti for a similar recipe. I find it’s closer in texture to Asian noodles and unlike in Italian dishes my family enjoys the healthier noodle in this dish.
