Parmesan Crusted Chicken with Lemon Rice

Ingredients

For the Parmesan Chicken:

For the Rice:

  • 1 cup long grain white rice, uncooked
  • 2 cups chicken broth
  • 1 tablespoon butter
  • 2 tablespoon lemon juice
  • 1/4 teaspoon grated lemon peel
  • 1/3 cup Parmesan cheese, grated
  • Optional Garnish: Fresh Chopped Parsley

Directions

In a saucepan on the stove, bring the chicken broth and lemon juice to a boil. Add the butter and rice, then reduce heat. Cover and let cook for 15-20 minutes on low until liquid is reduced and rice is tender.

In a shallow dish mix egg and milk together. In another shallow dish mix Panko bread crumbs and 1/3 cup shredded Parmesan cheese together.

Dip each piece of chicken into egg mixture then into bread crumb mixture.

Heat a large skillet to medium on the stove with olive oil. Add chicken and cook for about 3-4 minutes on each side, until chicken is golden brown and no longer pink inside.

When rice is tender, fold in Parmesan cheese and grated lemon rind.

Serve chicken with rice and garnish with fresh chopped parsley, if desired.

Tip: Make sure to use thinly sliced chicken cutlets or slice a chicken breast in half lengthwise and pound it with a meat tenderizer mallet so it beonlinees thinner.
