How To Make Meatloaf AND Mashed Potatoes in UNDER 1-Hour Using Your Instant Pot

Instant Pot Meatloaf & Mashed Potatoes

yield: 6 SERVINGS

Ingredients

For the Meatloaf:

  • 2 pounds ground beef
  • 1 egg
  • 1 cup Italian breadcrumbs
  • 1/3 cup ketchup or BBQ sauce
  • splash of Worcestershire
  • 2 tablespoons minced garlic, fresh
  • 2 tablespoons dried minced onion or 1/2 cup finely minced onion
  • 2 teaspoons dried parsley
  • extra ketchup or BBQ sauce for topping, if desired

For the Potatoes:

  • 2 lbs. potatoes, chopped (I used Yukon Gold potatoes with skins left on)
  • 1/2 cup half and half cream
  • 1/2 cup or more chicken broth
  • 2 tablespoons butter
  • Salt & Pepper to taste

Directions

1

Mix ingredients for meatloaf with a potato masher in a large bowl.

2

Transfer to a disposable foil loaf pan or make your own loaf shaped pan out of tin foil.

3

Cut potatoes into smaller pieces and place at the bottom of Instant Pot. Arranged them in an even layer. Add 1 cup broth or water over potatoes.

4

Place the rack that onlinees with your Instant Pot over potatoes and set the meatloaf on top. (I had to squish the pan a little for it to fit, but thatโ€™s fine.) The rack will make it easy for you to take loaf out when itโ€™s done.

5

Secure lid and set at Manual (high pressure) cook time to 25 minutes. Make sure steam release is closed.

6

When finished, do a quick release on the pressure.

7

Top with a little additional ketchup and place under the ovenโ€™s broiler for a few minutes to caramelize. (Optional, but yummy step!)

8

Meanwhile to make potatoes, mash them in the Instant Pot with half & half, broth, butter, salt, and pepper until creamy.

meatloaf and potato instant pot recipe

Need an excellent meal idea for your Instant Pot?🍴

Meatloaf and mashed potatoes has always been one of my family’s favorite onlinebos and this is a genius way to cook both foods together at the same time using an Instant Pot Pressure Cooker. Once the cook time is over, simply remove the loaf pan and finish the mashed potatoes in the same pot! Awesome, right?

If you happen to already have a favorite meatloaf recipe then feel free to use it, or use the simple one I usually make.

This is such a yummy homemade meal idea that takes under an hour to prepare!

Could you use a regular loaf pan instead of foil?

    • Lina (Hip's Modern Martha)

Yes if you have one that’ll fit ๐Ÿ‘

  11. Toni Kotzur

I want to make a mini meatloaf in the Instant pot, is this possible? and what time would I put it for? Thank you

  12. Kim

I made this tonight and there was a small raw rare spot in the center. I followed the instructions exactly. How much time would you suggest adding to avoid this?

  13. Jen

If I use turkey meat would I still use 2 pounds?

  14. Lisa

Made this tonight, was not cooked after 25mins, i put it in my oven for an additional 15mins. tasted great, mashed potatoes were amazing

  15. Ellen

Hello, I made this tonight and followed the recipe exactly. The meat was very pink. I cooked an additional 7 min, 7 more min, then 9 more min and it still had some pink. What did I do wrong?? Also, are you supposed to drain the potatoes before mashing??? It was good just took longer then I planned.

    • Gracia

I had the same problem with the meatloaf being rare. The internal temperature was only 110 degrees F after 25 minutes in the IP. I ended up cooking it in the oven at 425 degrees F for 20 more minutes. I also must not have used enough potatoes because they turned out really runny.

  16. Corina

My Instapot came with a steamer rack without handles, not like the one you have pictured. Not sure if that matters? Is the rack just sitting on the cut up potatoes?

  17. Debbie McKay

I followed the recipe all but used 30 minutes (after I read the onlinements) and it came out perfect!

  18. Kelley B

Made this tonight for our family of four and it was delish!!! I hit my time up to 30 min based on a couple of the onlinements, and it was perfect. We used 1 lb ground turkey and 1 lb ground beef. So great! Thanks for the recipe!!!

    • Lina D

      Perfect thanks for sharing!

  19. Connie Kapferer

This looks really good,! I’ll have to try it in my Instant Pot. Thanks for sharing !!!

  20. Kristen

What if just want to cook the meatloaf and skip the potatoes.

  21. Dee Shultz

What size pot are you using??? Two lbs meat in my 6 qt is way too much!

  22. Peggy

This was delicious! Made it tonight in my 6 quart IP and set the time for 30 minutes. I did let it NR for 7 minutes and then broiled it for another 3-4 minutes while I mashed the potatoes and set the table. Definitely will make this again! Thanks for sharing!

    • Lina D

Excellent! That’s great. Thanks for reporting back

  23. Matt Salmon

Iโ€™m making this now! I have a 10 quart instant pot. I fit 2 meatlofes and enough potatoes in it to feed 8 teenage boys. My sins have their friends over. Plenty of room!

  24. Shane matheson

Potatoes came out great. Meat was undercooked though, added 15 minutes at 425 in oven.

  25. Helen in Meridian

In a microwave workshop, I learned to shape my meatloaf like a lifesaver. This way there is more surface to cook, and you don’t have a raw middle.

    • Lina D

      Thatโ€™s a great tip!

  26. Marie Lovallo

I will be making a 1lb turkey meatloaf, do I need to adjust the cooking time.
P.S. I love my Instant Pot!!!
    Thank you for the recipe.

    • Lina D

My research online suggests a similar cook time, however you may want to soak breadcrumbs in milk, or add a little moisture in extra sauce as turkey could be a drier meat. Hope that helps ๐Ÿ‘

  27. Rhonda

*extremely* disappointed in your recipe. 25 minutes high pressure meatloaf still not cooked; more than 1 cup of broth is needed for the potatoes. Iโ€™ve been cooking for over two hours. ๐Ÿ™„

    • Lina D

Oh no – so sorry! So did it not onlinee to pressure? Not sure what happened- sorry Rhonda. Thatโ€™s frustrating ๐Ÿ˜ฉ

  28. Melanie

This was very good… I followed some other onlinements and went for the 30 minutes and it was perfect… the potatoes were delicious!! My husband said this tasted just like his momโ€™s meatloaf growing up!

  29. terri esterline

Would the cooking time be the same if you just made a 1 pound meatloaf? Looks delicious!!

    • Julie

Did the 1lb work? Just bought the 6qt. Looking for a first recipe. Only 2 people. Don’t like leftovers.

  30. Dalon Cantrell

I made this last night with 2.5lbs of meat and it cooked perfectly. I used aluminum foil instead of a disposable tin, since I didn’t have one and the meat spread out a bit, so that may help with the pink issue I am reading about. However, my husband wants me to try the tin next time since tomato based products and aluminum foil cooked together have been proven to cause cancer. sigh…everything causes cancer now-a-days. My only dislike of the recipe were the chicken stock in the potatoes. To me, it made it taste funny. Then again, it could have been the fumes from the meat or the foil. Who knows. The meatloaf had an amazing flavor and I also added green and yellow bell peppers. Thanks for the recipe, I’ll definitely be making this again!

    • Lina D

Thanks for the feedback! I’m glad it worked out!

  31. Deanna

This is the second thing Ive tried in my instant pot and Iโ€™m oh so glad I did! I followed everything exactly except I didnโ€™t use the chicken broth. Turned out delicious!

  32. Laura

May I ask should cook longer cause my husband loves boiled eggs in his meatloaf..ugh so one side eggs other side no eggs..lol? And actually how much does the potatoes feed 4-6 or is that the whole meal husband big eater…lol?

    • Lina D

I would say the entire meal feeds 4-6 depending on how much your family eats. Maybe 4 if your hubby is a big eater. Not sure what youโ€™re asking on the egg question?

  33. Rhoda

I made this tonight and it came out great. First, I did use 2lbs of meat and 3 large russet potatoes. I did set the manual time for 25 minutes; however, I did let it sit for 15 minutes after and then released pressure. I used 1 cup of water and it was perfect. Literally could of used a fork to mash them and I only a small amount of cream and butter but they were not runny at all. Hope this helps๐Ÿ˜ƒ

    • Lina D (Hip2Save Sidekick)

Thatโ€™s so great Rhonda! Thanks for sharing. ๐Ÿ‘

  34. Linda

My meat loaf wasnโ€™t quite done. I followed the recipe/directions exactly except I did not cook potatoes at same time.

  35. Heather

This recipe was an epic failure – my potatoes burned and the meatloaf was not done in 25 minutes – very frustrating

    • Lina D (Hip2Save Sidekick)

Oh man – so sorry that happened! Hmmm..I’m not sure what happened? This is a pretty popular recipe idea in IP groups. Thanks for sharing feedback. ๐Ÿ™

  36. Lauren

I put my meatloaf in a round cake pan, only used 1lb of meat. Will update with results!

    • Lauren

cake pan worked out PERFECTLY. 25 minutes was perfect for 1lb of meat. placed under broiler with extra sauce for a few minutes. husband and kids loved it!

      • Lina D (Hip2Save Sidekick)

That is so awesome! Thanks so much for reporting back!

  37. Amy

Could I use a glass loaf pan instead of aluminum? Would I add extra cook time?

    • Lina D (Hip2Save Sidekick)

Yes anything like Pirex cookware should be fine. I read online to add 5 minutes cook time. Hope that helps!

  38. Linda A Cece

I only have a two quart for my husband and I. I know I can make the ingredients to go for two but does the time change also?

  39. Debbie

So itโ€™s just my husband and me so I cut the recipe in half, would I still do 25 minutes?

    • Lina D (Hip2Save Sidekick)

yep I believe so! Thanks – and enjoy!

    • Debbie

Yes I cut all ingredients in half and turned out fabulous! So good!

  40. Tricia

Made this tonight for dinner. It was really good. I made it with 1 pound of bison and 1 pound of turkey. I did not have an egg so I substituted it with applesauce. I also read through the reviews and set my IP for 30 minutes. Will definitely make again.

    • Lina D (Hip2Save Sidekick)

      Thanks Tricia!
