Pistachio Cranberry Energy Bites

Energy bites are yummy no-bake treats made with oats and nut butter that can be customized with your family’s individual tastes. These Pistachio Cranberry Energy Bites are SO YUMMY and were super quick to make using a food processor. I love that they are portable and can be conveniently taken anywhere or packed in lunches.
Pistachio Cranberry Energy Bites
Whip up these easy Pistachio and Dried Fruit Energy Bites in just a few minutes for a yummy and naturally delicious snack!
Ingredients
- 1 Cup Dried Cranberries
- 1 Cup Dried Pineapple
- 1/2 Cup Pistachios (no shell)
- 1/2 Cup Old Fashioned Oats
- 1/2 Cup Cashews
- 1 Tablespoon Peanut Butter or Cashew Butter
- 1 Teaspoon Ground Ginger
- 3 Tablespoons Water
Directions

Place all ingredients in a food processor and turn on for about a minute or until pretty smooth. Add a little more water if needed.

Roll out teaspoon sized balls on a cookie sheet. Freeze until firm, then enjoy! That’s it! SO EASY.

This batch made about 18 balls. Using a recipe nutritional calculator they came in at about 130 calories per ball.
Note: You can definitely use other dried fruits as the original recipe called for dried pears and dates instead of pineapple and cranberries. I knew my kids wouldn’t eat the dates so I just substituted with ones they would! 😊 I also have used peanut butter instead of cashew butter, and I’m sure you could use whichever type of nut butter works for you.
