Pumpkin Pie Overnight Oatmeal
If you’re a fan of overnight oatmeal, then you have to try this healthy pumpkin pie version!
It’s such a delicious make ahead breakfast idea that’s perfect for Fall, and only takes a few minutes to prepare! Plus, it’s a nice way to utilize an open can of pumpkin puree if you happen to have some leftover from another recipe.
What is Overnight Oatmeal?
Overnight oatmeal is a way to prepare oatmeal by first onlinebining it with milk then storing it in the fridge overnight. By morning the texture is smooth and creamy and makes for a great grab and go breakfast. It’s meant to be eaten cold, and my family LOVES it! Adding Chia Seeds provides even more nutritional value such as extra fiber and antioxidants.

Pumpkin Pie Overnight Oats

Pumpkin flavored overnight oats that are ready for breakfast on the go!
Ingredients
- 1/3 Cup Almond Milk
- 1/3 Cup Old Fashioned Oats
- 1/4 Cup Pure Pumpkin Puree
- 1 Tsp. Chia Seeds
- 1 Tsp. Pure Maple Syrup
- 1/2 Tsp. Pumpkin Pie Spice
- Topping: Pecans

onlinebine all ingredients in a jar or container, close lid and place in the fridge overnight.

Enjoy in the morning with pecans.

If too thick, add additional liquid if desired.
The result is a creamy jar of pumpkin pie tasting deliciousness! I love that it’s definitely not overly sweet and something you can enjoy guilt-free! So yummy!
