The idea for this recipe occurred to me one day when I had surprise guests over and wanted to make a quick lunch. All I had in the fridge was a Costco rotisserie chicken and some ripe avocados on the counter. I managed to find some cilantro and then put together these quick and simple chicken salad sandwiches!

The sandwiches were SO TASTY, and I think everyone was surprised to hear this chicken salad had just three main ingredients.

So today, I’m excited to share this delicious idea with you as a simple and delicious meal to make for your family.

Hip tips for making this 3-ingredient Avocado Chicken Salad:

  • The secret for selecting the perfectly ripe avocado is that it will yield to firm gentle pressure when squeezed. If it feels super mushy to the touch, then it’s over-ripe.
  • If you’re worried about the avocado browning, you could try mixing some fresh lime juice into your avocado chicken salad. Lime fits perfectly with the flavor profile of the other ingredients in this recipe, and its citric acid will help to slow the browning of the avocado.

    I know that avacado s brown quickly does anyone know if I can keep it over night?

      I’m not sure how long it lasts but I’ve deffinitly seen a few like this recipe that put a little bit of lime juice in it. I’m sure that would at keep it from Browning for a little bit.

      Absolutely. Place the nut from the avocado in the mixer to store. It makes a big difference!

      Place the seed in the middle of the salad. Take plastic wrap and push it down on top of the salad,not from bowl side to bowl side, but like down on top of the salad. It keeps the air out and keeps them from browning so fast

      For the saving of half avacado put onion in a container with avocado.It works.I do it all the time.

      Parsley. I have a cilantro adversion, you can sub parsley most of the time. I make this a lot.

    To keep anything from browning with avacodo in it after you are finished making it use the avacodo seed to just set in top and it will keep it looking fresh for days when covered.

    I have seen on a site.. put onion over the top of the avocado, (slice and put the largest outside layer over the avocado) I do it, It works even if you have a little darkness…..it does not change the taste…it cost to much to throw away.) I would think that adding a little lemon juice to this salad mix would save the color.

    Add halved grapes, sliced almonds and salt and pepper. On a croissant. Yum! That’s how I make it with mayo. And usually with canned chicken. Now I’m going to have to try it with avocado and cilantro. Sounds great!

    This would probably be great w some added fresh lime juice!! I do avocado and ciliantro w lime juice as a topper for burgers instead of ketchup with is just high fructose corn surged 🙄 much better alternative

    Not a fan of cilantro so I would add a teaspoon of dill instead and maybe a few chopped dried cranberries.
