Roasted Tomato & Garlic Bruschetta

yield: 9 SERVINGS

Ingredients

  • 2 pints cherry tomatoes sliced in half (I used both yellow and red tomatoes)
  • 1/4 cup basil, thinly sliced
  • 2 cloves garlic, peeled & sliced
  • 1/4 cup olive oil
  • 1 teaspoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • loaf of crusty bread, sliced
  • 2 tablespoons butter

Directions

Preheat oven to 400 degrees.

Toss sliced tomatoes, sliced garlic, olive oil, salt & pepper together and place on a roasting pan.

Bake for 20 minutes. Slice and butter bread. Either toast bread in the oven or use a grill pan on the stove like I did to get those beautiful grill marks.

Mix roasted tomatoes and garlic with the basil and balsamic vinegar. Top slices of bread with mixture. Serve warm or at room temperature. This recipe made 9 slices for me. Enjoy!

    any idea what to do to get rid of the tomato skins? does anybody else mind them?

      Drop in boiling water for a few seconds then drop in ice water. Skin will peel off easily

    My parents live next door to us, so my mom and dad made some and brought us over a plate to go with our dinner. It was amazing. All I have to say is so much for my diet today. But boy, was it worth it.:)
