Ingredients

  • 1 envelope onion soup mix such as Lipton’s brand (click here for a homemade Onion Soup recipe)
  • 1/2 cup olive oil
  • 2 lbs. all-purpose potatoes, cut into quarters ( I use red potatoes)

Directions

Preheat oven to 450°.

Thoroughly blend all ingredients except potatoes in shallow baking or roasting pan. Add potatoes and turn to coat thoroughly (or put everything in a plastic bag to coat potatoes onlinepletely and then place in pan).

Bake uncovered, stirring occasionally, 60 minutes or until potatoes are tender and golden brown. Garnish, if desired, with chopped parsley.

Get ready for the easiest crowd pleaser side dish ever! It’s called roasted onion potatoes and my family and friends LOVE them. If you’re not already making this regularly, you’ll want to try it! This is so easy to prep before a party and throw in the oven – these potatoes onlinee out great every time and taste so yummy (I love leaving them in the oven until the outside get extra crispy)!

      Do you cook the carrots the same amount of time (60 min)? Do you use baby carrots? (Just trying to figure out if baby carrots will scorch, haha).

        I follow the instructions on the packet and I bake mine covered until tender then uncovered to brown/crisp them. I use baby carrots and the whole process is probably 45 mins in the oven. I also bake mine in a deeper disposable pan. I’d say its considered a roasting pan? Lol

    Lipton used to make a seasoning for potatoes that was essentially onion soup mix. Guess everyone figured out that it wasn’t necessary to buy the product marketed specifically for potatoes, LOL.

    Instead of buying Lipton soup mix I use spices I already have in my cabinet. Thyme is awesome on these potatoes.

      Absolutely! Penzey’s spices and spice blends are great for this–and a good way to try all their fun freebies. You can also extrapolate this to any other vegetable that can be roasted: sweet potatoes, turnips, rutabagas, parsnips, carrots, squash, etc.–no recipe needed! I also do something similar with mushrooms–saute until golden, add some seasoning (Penzey’s buttermilk ranch last time) and a little water, cook off most of the liquid, and serve!

      It’s still kind of a jolt for me; I expect Collin’s voice in these first-person posts. I don’t really care about the recipes or crafts per se–there are specialty bloggers, sites, and Pinterest for that–I read them for Collin’s self-deprecating humor, mishaps, and amusing off-the-wall observations. JMO.

        I agree, it’s a little strange having a different narrator on this site. I do appreciate that Collin is only one person and understand she has various “helpers” to keep up this site on a day to day basis though, so overall I like that there is more content. I’d rather there be more content on a daily basis and just skim by the things that don’t interest me than to wait a long time for another post. I’d probably onlinepare Lina’s style more to Sandra Lee than Martha, simply because Martha makes almost no shortcuts and Sandra is more than upfront with her willingness to use packaged foods if it means saving time and money overall. Just a small observation, but again, I love that there is constantly new content to read.

      I’m thinking some sliced apples and caramel dip would be nice, or make a fruit, veggie, cheese, and cracker platter. I just saw a turkey inspired fruit tray using half a pear, flat side down for the turkey body and arrange sliced fruit behind it for the feathers? Good luck 🙂

    Oh and add some coconut oil and they will have the best taste ever! Also using your own seasoning never hurt and easy to throw together when onion soups is not available.

    I make these potatoes with a ranch dressing packet, a chopped up onion, and sliced smoked sausage. I only use 1/4 cup of oil. Easy and good! I cook it on a silpat mat for easy clean-up. We use our silpat mat almost every time we bake anything in the oven. If you don’t have one, they are well worth the money!!

    Is it best to only use red potatoes, I don’t usually by them.

      I think it’s just a matter of preference. If you don’t buy red bliss potatoes normally definitely do NOT make a special purchase just for this recipe.

    Like crispy potatoes instead? Boil potatoes til fork tender. Mix gently with olive oil & soup mix and lay out on sheet pan. Use potato masher & mash down. Put in 400 degree oven for 15-20 mins til crispy. Yum!
