Banana Crumb Muffins Recipe

Ingredients
For the Muffins:
- 1 and 1/2 cups All-Purpose Flour
- 1/2 teaspoon Salt
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 cup butter, melted
- 1 egg
- 3/4 cup white Sugar
- 3 ripe bananas, mashed
For the Crumb Topping:
- 1/3 cup packed brown sugar
- 2 Tablespoons flour
- 1/8 teaspoon ground cinnamon
- 1 Tablespoon butter

Preheat oven to 375 degrees.

Grease muffin pan, or use muffin liners. I used ten 5-inch square pieces of parchment paper. If you do this as well, it does help to spray a little non-stick spray in the pan and then firmly place the parchment paper in each muffin slot.

Mix together flour, baking soda, baking powder, and salt.

In a separate bowl, mash bananas and add sugar, butter, and egg.

For the crumb topping: In a small bowl, mix together brown sugar, flour, and cinnamon. Add butter. Sprinkle crumb topping on top of the muffins.

Bake at 375 for 18-20 minutes. Insert a toothpick and they are done if the toothpick onlinees out clean. Makes 10 muffins
These turned out super delicious, tender and moist! What a great way to use up really ripe bananas too!
